Senior Sous Chef (Mediterranean Cuisine)

POSITION OVERVIEW The position is responsible in assisting the Executive Sous Chef in maintaining the high quality standard of food preparation and service according to First Class International Hotel Standards. You will be running the kitchen on a day to day basis in the absence of the Executive Sous Chef including the non-cooking tasks such as ordering food and scheduling colleagues for work.

RESPONSIBILITIES Planning and directing daily food preparation and service in the kitchen. Expediting and relating orders to subordinates and ensuring that the group work as a team. Assists the Executive Sous Chef in menu compilation and possesses an in depth knowledge of the full menu. Maintains food standard set-up by Executive Chef. Ensures consistency of produce throughout the kitchen. Ensures compliance with food labeling and temperature controls. Supports the management team to ensure targets are met with labor and food costs. Identifies ways to improve profitability. Communicates relevant business information regularly, efficiently and concisely to their team. Helps develop the junior chefs though proper training and guidance. Builds effective and constructive relationships. Keeps an eye and takes responsibility for problems that may arise in the kitchen. To inform his/her subordinates on any new developments subject for discussions, implementations based on guidelines or solving problems concerning operations or personnel that emanates from the Executive Sous Chef or Executive Chef. Be a willing team worker at all times. Accepts and performs special assignments within or outside his Department as requested by the Immediate Head. Practices cleanliness within the working area as well as neatness in appearance by wearing required uniform. Keeps abreast of all company policies, code of conduct & behavior by reading and understanding all guidelines issued pertaining to such matters; and performing such duties and functions as specified in the guidelines. QUALIFICATIONS Has at least five (5) years work experience in the same capacity College Graduate/Level with two (2) years experience and/or training, or an equivalent combination of education and experience to meet the required knowledge, skills and abilities Has strong management and leadership skills Has good time management skills
